Smoked Salmon Platter Recipe

Personally, I'm not the world's biggest smoked salmon fan but people devour this when I make it for catered parties so I thought I'd share. Serve this platter with fresh, toasted bagels (my recipe is posted here) and whipped cream cheese.

Ingredients
- 1 large package Norweigan smoked salmon
- 1-2 small handfuls of capers
- 3-4 lemons, sliced
- 2 english cucumbers
- 1 red onion, chopped and rinsed (very important to rinse!)
- fresh chives (or dill) to garnish

Directions
- Place the salmon in the center of a large platter (all white looks the best).
- With a sharp vegetable peeler, make long ribbons out of the cucumber. Roll each slice up. Place along each side of salmon.
- Pour red onion along side cucumber ribbons then arrange halves of lemon slices all around the platter.
- Sprinkle salmon with the capers and garnish with fresh chives or dill.
- Serve with fresh, toasted bagels and whipped cream cheese.

Glad I popped in tonight and caught this one - while I'm not the biggest grilled or baked or steamed or whatever salmon fan, I LOVE smoked salmon. This platter looks delicious, and I can see why it would be devoured...this will be a good one to do for my niece's shower coming up later this month. Thanks!
