Strawberries With Buttermilk Ice And Balsamic Vinegar Recipe
This is a fluffy granita made with buttermilk, which is low in fat, high in calcium and easy to digest. Spooned over creamy, tangy ice over lightly sweetened strawberries, a vitamin C loaded fruit.

  • 3 1/2 tsps. sugar or sugar equivalent
  • 1 1/2 tablespoon fresh lemon juice
  • 1 cup low fat buttermilk
  • 1 pint strawberries, quartered
  • 1/2 teaspoon finely grated lemon zest
  • 1 tsp aged balsamic vinegar
  • 4 tiny tarragon sprigs

Directions
  1. In a bowl whisk the 1 1/2 tablespoons of the sugar with 1/2 tablespoon of the lemon jice until the sugar is dissolved. (you can use sugar sub if you want)
  2. Whisk in the buttermilk and pour into a shallow baking dish, freeze until firm, whisking the mixutre every 30 minutes, about threee hours.
  3. In a bowl, toss the strawberries with the remaining2 tablespoons of sugar and 1 tablespoon of lemon juice.
  4. Add the lemon zest and vinegar and let stand for 30 minutes, Spoon the berries and any juices into glasses
  5. Take a fork and scrape the buttermilk into fluffy ice
  6. crystals and spoon over strawberries. Garnish with
  7. tarragon and serve.

Sounds very delish; very summery dish, lol it is much too cold here for that at the moment but it will go into my "must try" pile - we will enjoy it on a hot summer evening, the sugar substitute is a great idea for us sugar addicts

I've never made granita with buttermilk and/or balsamic. I'm intrigued. Thank you for sharing.


Just keep in mind that vit.C and dairy products' proteins neutralise each other when consumed together ! They need a 30 min . interval ... BUT , since desserts are eaten for taste bud and soul pleasure , go ahead and ENJOY ....!!
