Ingredients
  • 8 oz. cottage cheese
  • 8 oz. ricotta cheese
  • 8 oz. cream cheese, softened
  • 1 stick or 1/2 cup butter, softened
  • 4 large cloves of garlic, minced very fine
  • 2 medium shallots, minced very fine
  • 1/2 cup chopped fresh parsley, packed tight
  • 1/2 cup chopped fresh thyme, leaves only no stems
  • 1/3 cup fresh chives, minced
  • 1 teaspoon freshly ground pepper (coarsely ground)
  • 1/4 teaspoon cayenne pepper
  • pinch of kosher salt

Directions
  1. In a medium size mixing bowl, blend cheeses and butter. Add remaining ingredients. Mix thoroughly and store in crocks or ramekins in the refrigerator. Makes 4 cups.
