How to make it

  • 1)Cream margarine; gradually add 2/3 cup sugar, beating at medium speed of a mixer until light and fluffy. Add molasses and egg; beat well.
  • 2)Combine flour and the next 4 ingredients; gradually add to creamed mixture, stirring until well blended. Divide dough in half; wrap each portion in plastic wrap. Freeze for 30 minutes.
  • 3)Preheat oven to 350º.
  • 4)Shape each portion of dough into 26 ( 1-inch ) balls; roll in remaining 3 Tbs. sugar. Place balls 2 inches apart on baking sheets coated with cooking spray. Bake at 350º for 12 minutes or until lightly browned. Remove from baking sheets; let cool on wire racks.

    I love ginger cookies! These sound great and it doesn't have a ton of butter! I just have 2 questions. Are these soft or crunchy style cookies? Should we flatten each cookie after forming them into balls?
