Grilled Chicken with Plum and Honey Sauce

- 4 whole chicken breasts shopping list
- plum honey Sauce: shopping list
- 5 large round ripe plums, purple shopping list
- 1/4 cup honey- more to taste if desired shopping list
- 1 tsp granulated sugar or Splenda shopping list
- dash salt shopping list
- fresh grated nutmeg to taste shopping list
- 1 Tbs. butter or margarine shopping list
- cornstarch to thicken shopping list
- ( 1 Tbs mixed with just enough cold water to thin ) shopping list
How to make it
- Marinade chicken with your favorite homemade or bottled Italian vinaigrette in a plastic bag overnight ..
- Drain and grill chicken until done.
- Meanwhile make the plum sauce.
- Wash plums, remove pits ( keep skins on ) and coarse chop and place in sauce pot with honey.
- Bring to a boil and reduce heat.
- Plums will soften and liquefy.
- Add sugar, salt, nutmeg to taste and butter.
- Blend smooth with hand held blender ( or remove mixture and carefully puree in blender or food processor and return to pot).
- Thicken with some cornstarch.
- Increase heat to a near boil and whisk sauce until it becomes thick and smooth.
- To serve chicken:
- Ladle some plum sauce on a plate.
- Place on chicken breast and then ladle on some more plum sauce.
- Accompany with favorite colorful vegetables
- Serves 4 to 8 .
