How to make it

  • Marinade chicken with your favorite homemade or bottled Italian vinaigrette in a plastic bag overnight ..
  • Drain and grill chicken until done.
  • Meanwhile make the plum sauce.
  • Wash plums, remove pits ( keep skins on ) and coarse chop and place in sauce pot with honey.
  • Bring to a boil and reduce heat.
  • Plums will soften and liquefy.
  • Add sugar, salt, nutmeg to taste and butter.
  • Blend smooth with hand held blender ( or remove mixture and carefully puree in blender or food processor and return to pot).
  • Thicken with some cornstarch.
  • Increase heat to a near boil and whisk sauce until it becomes thick and smooth.
  • To serve chicken:
  • Ladle some plum sauce on a plate.
  • Place on chicken breast and then ladle on some more plum sauce.
  • Accompany with favorite colorful vegetables
  • Serves 4 to 8 .

    Looks beautiful and I am sure was a taste sensation.
    FYI - when I was a child we grew some fruit trees - among them apples and plums. My mother made applesauce because the apples were bitter and tossed some whole plums in, too. The color came out wonderful and the taste was lovely.
