How to make it

  • 1. Preheat oven to 425 degrees.
  • 2. Brown meat with chopped onion & garlic powder
  • 3. Stir in beans and chili powder. Cook for 3-4 minutes until nicely blended.
  • 4. Put layer of 2 cups of Fritos on bottom of glass bowl or pan. Put 1 cup of cheese on top of Fritos. Place meat/bean mixture of cheese and Fritos. Spread evenly. Then, top with other 2 cups of cheese. Lastly, sprinkle the last cup of Fritos on top of cheese.
  • 5. Cover with glass lid or foil. Place in oven for 15 minutes.

    This sounds like a great casserole, but it should be named corn chip casserole or something. Frito Pie is an actual classic recipe that was invented by Mrs. Daisy Dean Doolin of Texas, although some in New Mexico think it was invented in Woolworth's in Santa Fe, where it became famous. They served it until the store closed in 1997. The original was to open a 1.75 ounce bag of Fritos corn chips and pour 1/2 cup chili, 1/4 cup shredded cheese, 1 tablespoon chopped onion and a couple of jalapeno slices and eat it out of the bag. It is still menued this way in some Texas cafes. I posted this recipe and one friend hosted a party for a teens birthday and served this and it was a hit. The bag trick isn't family friendly and your Corn Chip Casserole sounds great.
