How to make it

  • Combine 2 oounces of caster sugar with 2 ounces of water and bring to the boil
  • Remove from the heat and add the cherries and set aside to cool
  • When cool ,strain ,discard the liquid ,and coarsely chop the cherries
  • Preheat the oven to 280 F
  • Combine the butter ,cherries ,and chocolate in a large bowl ,stirring until well combined ,and set aside
  • Whisk the egg yolks ,all 16 , and 7 ounces sugar , in an electric mixer until thick and pale ,about 4-5 minutes
  • Then fold in the chocolate mixture and set aside
  • Now whisk the eggwhites in an electric mixer until frothy ,then with the motor running ,gradually add the remaining sugar in a continuous stream and whisk until soft peaks form ,about 3-4 minutes .
  • Fold the Dutch cocoa into the chocolate mixture carefully with a metal spoon
  • Stir the sour cream until smooth then fold into the chocolate mix
  • Now fold in the eggwhite to the mix as well
  • Pour into a 12 inch spring form tin , well lined with non-stick baking paper to prevent leaking .I use my cheese cake tin.
  • Bake in the oven for 30 mins then rotate the pan a half turn ,and cook a further 30 mins
  • Now check every 5 mins or so until the edges are set and the centre is still slightly fudgy ,about another 15 mins
  • Set aside to cool completely then release from the spring-form pan
  • Dust with cocoa ,optional ,and serve with Creme fraiche ,the slightly soured French cream -or normal cream if you wish .
  • A lot of work but a cake worthy of your best occasion ,and a very adult and rich flavour . Make a normal cake for the kids and eat this one yourself ! It will keep in a cool place for 4 days ,if it lasts that long

    Thank you for that ---I have used dried cranberries ,a fine substitute but not the intensity of flavour .Dried sour cherries can be hard to source in a rural area ,thanks be for the internet and mail order .
