French Onion Soup Recipe
A quick and easy take on the classic onion soup. Good any time of the year

Ingredients
  • 1 1/2 cup red onion, sliced
  • 1 1/2 cup yellow or white onion, sliced
  • 1 cup leeks, sliced and cleaned
  • 1/2 cup scallions, sliced
  • 4 cloves garlic, minced
  • 1 tblsp butter
  • 4 cups low salt/low fat beef broth (use vegetable broth for a vegetarian option)
  • 1 cup red wine
  • 2 tsp thyme
  • salt and pepper
  • crusty French bread, sliced into 1/2" thick rounds
  • 1/4 cup gruyere cheese, grated

Directions
  1. Add onions, garlic, butter and a heavy pinch of salt to a large pot over medium heat.
  2. Stir until onions begin to turn translucent
  3. Add broth, wine, thyme and a teaspoon each of salt and pepper.
  4. Turn heat to high and bring to a boil
  5. Reduce heat to a simmer and cook for 30 minutes
  6. Toast bread.
  7. Place 1-3 croutons in a bowl and ladle soup over it. Sprinkle on a little cheese and serve hot.
