French Onion Soup

    Recipe: French Onion Soup

    The flavor of leeks is one of those little known secrets behind really great recipes, especially soups. When I saw this French Onion Soup recipe using leeks, I just had to try it. Personally, I don’t like tweaking recipes too much and giving reviews, but I had to make adjustments to this one and it starts with the wine. I don’t like wine, especially red wine. I cut the amount in half and honestly, that was still too much for my sensitive taste. I even added extra beef broth trying to cut the taste. No dice! The recipe didn’t specify the type of thyme. I’m assuming dried, but I used ground so I reduced the amount in half and only used 1tsp. Also added a bay leaf hoping to help with the wine taste. Again, no dice! I skipped the addition of salt since I used regular beef broth, but for the pepper I chose ground white pepper and added the recommended teaspoon. Oh my, was that way too much! Or, so I thought. Since there was nothing I could do about it, I was forced to go with it. After topping with toasted bread, the Gruyere cheese and broiling under the broiler, you couldn’t even tell it had pepper in it. Still noticed the wine though. lol! Hubby said this was THE ABSOLUTE BEST French Onion soup he’s ever had! I trust his opinion because French Onion isn’t one of his favorites. When I asked what made this one different, he said “everything!”--the flavor of the broth and especially the Gruyere cheese!

    Love your pic DIZ3. Yah I can see what you are saying about the wine. Even to me 1 cup looks like a lot so will keep it in mind as I have bookmarked the recipe.

    I am the same with wine, especially red! I ruined a beef stew and a gravy before with it, so I'll never touch it again ;)
    I love leeks though!! Will have to try it with leeks some time! :)

    Thank You Everyone! Just had the leftovers for dinner. DH still couldn't get over how good it was. He even suggested inviting friends over and making this for dinner. I guess I will jot down all of the adjustments and put this one in the keep file. Wine and all!

    Thank You, Cosmicmother! I don't know what it is with wine, but I've never cared for it. And it's not for the lack of trying! I have a few recipes that I will add it, but they are far and few between.

    I always look forward to your posts DIZ, you take amazing pictures and leave great reviews here in the IMI :) I do love cooking with wine and my kiddos have never complained of anything tasting to "wine-y" or "off" either, so y'all sure do have some sensitive taste buds lol. Of course I always make sure to cook the alcohol off :)This looks fantastic!!

    Thank you so much, Mommyluvs2cook! Always nice to hear. I do have very sensitive taste buds, especially if it's something I don't like. Taste must go with smell because I have a keen sense of smell and can detect things most people can't. I thought the wine taste would cook off, especially only using half. DH sure loved it! The more I think about it, red wine does pair well with the Gruyere cheese.

    All kinds of onion flavors going on in here. Cubed up a slice of soft white bread instead of using croutons.
    Next time I would halve the pepper. It was a little much and mother was complaining about the salt. I think she was getting it confused with the pepper.
    Like the way the cheese got stringy.
