Ingredients

How to make it

  • Preheat oven to 425 degrees.
  • In a roasting pan toss chicken, potatoes and onions with oil, seasoning, salt and pepper.
  • Roast 1 hour.
  • Stir in sun-dried tomatoes, olives and capers.
  • Increase oven temperature to 475 degrees.
  • Roast for 10 minutes or until potatoes are browned and chicken is no longer pink near the bone.
  • Serve sprinkled with parsley.
