Crispy Italian-Style Chicken And Potatoes Recipe
An Italian twist to a no-fuss one dish chicken and potato dinner. This recipe comes from Woman's World Sept. 2003.

Ingredients
  • 8 pieces bone-in chicken, 3 to 4 lbs
  • 1 1/2 lbs all-purpose potatoes, cut into 1" pieces
  • 2 onions, cut into 1/2" thick wedges
  • 3 Tbsp olive oil
  • 1 tsp dried Italian seasoning
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/3 cup drained oil-packed sun-dried tomatoes, cut into strips
  • 1/2 cup small pitted green olives
  • 1 Tbsp capers, drained and rinsed
  • 1 Tbsp chopped fresh parsley

Directions
  1. Preheat oven to 425 degrees.
  2. In a roasting pan toss chicken, potatoes and onions with oil, seasoning, salt and pepper.
  3. Roast 1 hour.
  4. Stir in sun-dried tomatoes, olives and capers.
  5. Increase oven temperature to 475 degrees.
  6. Roast for 10 minutes or until potatoes are browned and chicken is no longer pink near the bone.
  7. Serve sprinkled with parsley.
