Crispy Italian-Style Chicken and Potatoes

- 8 pieces bone-in chicken, 3 to 4 lbs shopping list
- 1 1/2 lbs all-purpose potatoes, cut into 1" pieces shopping list
- 2 onions, cut into 1/2" thick wedges shopping list
- 3 Tbsp olive oil shopping list
- 1 tsp dried Italian seasoning shopping list
- 1 tsp salt shopping list
- 1/2 tsp pepper shopping list
- 1/3 cup drained oil-packed sun-dried tomatoes, cut into strips shopping list
- 1/2 cup small pitted green olives shopping list
- 1 Tbsp capers, drained and rinsed shopping list
- 1 Tbsp chopped fresh parsley shopping list
How to make it
- Preheat oven to 425 degrees.
- In a roasting pan toss chicken, potatoes and onions with oil, seasoning, salt and pepper.
- Roast 1 hour.
- Stir in sun-dried tomatoes, olives and capers.
- Increase oven temperature to 475 degrees.
- Roast for 10 minutes or until potatoes are browned and chicken is no longer pink near the bone.
- Serve sprinkled with parsley.
