Pull Apart Three Cheese Quesadillas

- 4 (7-inch) corn or flour tortillas. I used jalapeno flavored flour tortillas shopping list
- 1/2 cup ricotta cheese shopping list
- 1 1/3 cups (about 5 oz) shredded mozzarella shopping list
- 1/4 cup crumbled feta cheese shopping list
- 12 fresh basil leaves (fine shredded) shopping list
How to make it
- Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
- Place 2 tortillas on the prepared baking sheet and spread each with half the ricotta.
- Sprinkle with mozzarella and the feta, dividing evenly. Sprinkle shredded basil leaves on top of cheese-topped tortillas. I tried this with and without salt. The cheese is sort of bland without additional seasoning. I used seasoning salt to bring out the flavor more. Cover each with a remaining tortilla and press lightly.
- I chose to fill each tortilla with 1/4 of the ingredients and then folded the tortilla in half.
- Bake the quesadillas 5 minutes. Carefully turn the quesidillas over. Bake until golden and the cheeses have melted, about 5 minutes longer. Five minutes on each side may be too long if you like you quesadilla golden but still soft.
- Slide the parchment and the quesadillas onto a cutting board and each into 4 wedges using a pizza cutter. Serve.
- You can also make this on the stove top by buttering one side of each tortilla. Assemble the tortilla per the directions. Place buttered side down in a heated pan on the stove top. Carefully flip over and cook the other side. After all, grilled cheese sandwiches are just an american version of a quesadilla.
