This Caribbean slaw is a mango slaw delight. Quit refeshing and on the side with maybe a sweet and sour Chicken nugets, nachos and a non-alcohlic or alcohol cooler.

  • Orange-Mango Dressing follows:
  • Ingredients:
  • ½ Mango, peeled, pitted and cubed
  • 1 ( 6oz ) container of plain nonfat yogurt
  • ¼ cup frozen orange juice concentrate
  • 3 Tbs. fresh lime juice
  • ½ to 1 Jalapeno pepper stemmed, seeded and minced*
  • 1 tsp. Finely minced fresh ginger
  • Slaw:
  • Ingredients:
  • 8 cups shredded green cabbage
  • 1 ½ large Mangoes, peeled, pitted and diced
  • ½ medium red bell pepper, thinly sliced
  • ½ medium yellow bell pepper, thinly sliced
  • 6 green onions, thinly sliced
  • ¼ cup chopped cilantro

Directions
  1. Orange-Mango Dressing
  2. Method
  3. *Jalapeno peppers can sting and irritate the skin. Wear rubber gloves when handling peppers and do not touch eyes.
  4. Place mango in food processor; process until smooth. Add remaining ingredients; process until smooth. Makes 1 cup
  5. Refrigerate till ready to use.
  6. Slaw Method
  7. 1)Combine cabbage, mangoes, bell peppers, green onions and cilantro in large bowl; stir gently to mix evenly. Pour in the prepared chilled Orange-Mango Dressing; toss gently to coat.
  8. 2)Serve, or store in frig. Up to a day.
  9. Calories per serving: 124

YUM YUM YUM!!! love love love. 55555555555555555555555 I'll have to include purple cabbage in mine. Mangoes and Coleslaw are "homeruns" in my world .


This recipe is perfect with my Jerk Chicken. All I need now are the ocean waves to go with my meal!


Oh, this sounds SO good! Take out the cilantro and I'm all over this one!
