Cannoli Cake

- 2 lbs ricotta shopping list
- 1 2/3 cup sugar shopping list
- 1 tsp vanilla shopping list
- 1/4 cup white creme de cocoa or 1 tsp chocolate extract shopping list
- 1/4 cup semi -sweet chocolate chips shopping list
- 1/4 cup candied fruit, chopped (optional) shopping list
- 2 1/2 dz lady fingers, split shopping list
- candied cherries or maraschino cherries shopping list
How to make it
- Combine ricotta, sugar, vanilla and creme de cocoa.
- Beat at medium speed for about 10 minutes, until light and fluffy.
- Mix in candied fruit and chocolate bits.
- Line the sides and bottom of a 10" spring form pan with lady fingers.
- Pour about 1/3 of the ricotta mixture over lady fingers and repeat layer, ending with lady fingers, making a pinwheel design.
- Refrigerate at least four hours or overnight.
- Decorate with cherries.
