How to make it

  • Prepare grill to med-high heat. Sprinkle chicken evenly with1/4 tsp salt and 1/4 tsp pepper. Place chicken on grill rack coated with cooking spray,and grill 6 mins each side or till chicken is done. Keep warm.
  • Combine tomatoes,1-1/2 Tb dressing and olives in a med. skillet over med. heat,and cook for 2 mins or till tomatoes soften slightly amd mixture is thoroughly heated,stirring occasionally. Brush chicken with remaining 1-1/2 Tb dressing.
  • Cut each chicken breast half into 3/4" slices. Top each half with 1/4 c tomato mixture.
  • Sprinkle each serving with 2 Tbs cheese and torn basil leaves,if desired.

    This sounds good, but I've never had kalamata olives and never heard of picholine olives. I take it they're very salty. I should span out.......
