How to make it

  • Prepare pasta al dente. Drain and set aside.
  • In a large skillet, over medium- high heat, saute garlic in olive oil for about 1 minute.
  • Add scallops and cook for about 1 minute on each side.
  • Add sun-dried tomatoes, lemon juice and wine. Bring to a boil, reduce heat and simmer for 5 minutes. Season with salt and pepper to taste.
  • Stir in butter and toss with pasta. Top with cheese
