Angel Hair Pasta with Scallops and Sun-Dried Tomatoes

- 1 lb. angel hair pasta shopping list
- 3 cloves garlic, minced shopping list
- 3 Tbsp. olive oil shopping list
- 1 lb. scallops shopping list
- 1 pkg. sun-dried tomatoes (about 10 tomatoes), crumbled shopping list
- 1/2 cup lemon juice shopping list
- 1/2 cup dry white wine (chicken stock may be substituted) shopping list
- salt and pepper, to taste shopping list
- 2 Tbsp. butter shopping list
- Freshly grated parmesan cheese shopping list
How to make it
- Prepare pasta al dente. Drain and set aside.
- In a large skillet, over medium- high heat, saute garlic in olive oil for about 1 minute.
- Add scallops and cook for about 1 minute on each side.
- Add sun-dried tomatoes, lemon juice and wine. Bring to a boil, reduce heat and simmer for 5 minutes. Season with salt and pepper to taste.
- Stir in butter and toss with pasta. Top with cheese
