Gails Pasta Salad Recipe
This is a perfect side for summer cookouts. It's great to make a day ahead, then add more oil/vinegar as needed.

Ingredients
  • 1 12-16 oz. package pasta (bowties work well)
  • 1 cup sun dried tomato halves, softened (I usually get the oil packed kind in a jar, drain them and chop them up)
  • 1/3 cup pine nuts, toasted
  • 3/4 cup yellow onions, julienned or chopped
  • 3/4 cup spinach leaves, chopped
  • 6 oz. feta cheese, crumbled
  • 2 T Parmesan cheese, grated
  • 1/4 t. oregano
  • 1/4 cup extra virgin olive oil (or more to taste)
  • 1/4 cup white wine vinegar (or more to taste)
  • Salt & Pepper to taste

Directions
  1. Cook pasta according to package directions. When pasta is al dente, drain well.
  2. Using a wooden sppon, toss pasta in colander for 2 minutes to air cool.
  3. In a large bowl, mix pasta with remaining ingredients.
  4. Adjust seasoning and serve.

I see your a pasta lover also! Great post.. I add pepperoni sometimes to ours.


I'm lovin' the sound of this one - and I could see the added pepperoni that linebb956 suggested, or ham, or shrimp maybe? This will be served at our place soon!


Or chicken? This sounds great! Love making pasta dishes. Great versatile recipe.
