Easy and tasty chicken,cheese and potato dish. Just add a vegetable or salad and call it dinner.

Ingredients
- 4 slices bacon
- 4 boneless,skinless chicken breast halves (1lb)
- 4 c (1 lb) frozen diced potatoes with peppers and onions,thawed
- 4 oz. (1 c) shredded sharp cheddar cheese
Directions
- Cook bacon in large non-stick skillet over med. heat 5 mins. or till crisp. Remove from skillet to paper towel;discard drippings.
- Add chicken to skillet;cook 5 mins on each side or till done. Remove chicken from skillet;cover to keep warm
- Crumble bacon. Add to skillet with potatoes;cook and stir 5 mins.;or till heated through.
- Place chicken over potatoes;top with cheese. Cover;cook 2 mins. or till cheese is melted.

"discard drippings" you never discard bacon drippings. LOL Save them for another meal when a small amount of grease is needed. Great recipe ^5 :)
