Guisada Recipe
This is based on a traditional guisada recipe....great to use up leftover meats and veggies! It's hearty, delicious, warming, comfort food that will have your home smelling great!

Ingredients
  • 2 Tbs olive oil
  • 1/2 yellow onion, chopped
  • 1 green bell pepper, chopped
  • 1/2 yellow or red bell pepper (opt), chopped
  • 2-3 cloves garlic, minced
  • Any veggies that you need to use up...ie, zucchini, squash, broccoli, mushrooms, etc, chopped
  • Dash of Kosher salt and pepper (to taste)
  • Approx 1 cup, cooked, (leftover) steak, chicken, or pork, cut into small cubes
  • (1) 15 ounce can tomato sauce
  • 1-2 tsp cumin
  • 1 - 1 1/2 Tbs chili powder
  • Dash of cinnamon
  • 1/2 - 1 cup chicken broth
  • Corn tortillas
  • Shredded mozzarella cheese

Directions
  1. Saute onion, peppers and garlic (and any other veggies that you like) in oil, over medium heat, until tender.
  2. Add dash of kosher salt and pepper.
  3. Add meat to the pan, and heat through, 2-3 minutes
  4. Add tomato sauce, cumin, chili powder and cinnamon.
  5. Stir to combine and simmer for 1-2 minutes.
  6. Add chicken broth, slowly, stirring to combine.
  7. Bring to a boil, reduce heat and simmer for 30 minutes to 2 hours, stirring occasionally. (it will reduce and thicken...add more chicken broth if needed for proper consistency).
  8. In a skillet, heat up corn tortilla, on both sides, in small amount of olive oil
  9. Remove tortilla from skillet and transfer to plate
  10. Add large spoonful of guisada mixture to tortilla and top with cheese and fold over, like a taco.
  11. Serve and enjoy!
  12. Great served with beans and rice, too!
