- 2 Tbs olive oil shopping list
- 1/2 yellow onion, chopped shopping list
- 1 green bell pepper, chopped shopping list
- 1/2 yellow or red bell pepper (opt), chopped shopping list
- 2-3 cloves garlic, minced shopping list
- Any veggies that you need to use up...ie, zucchini, squash, broccoli, mushrooms, etc, chopped shopping list
- Dash of kosher salt and pepper (to taste) shopping list
- Approx 1 cup, cooked, (leftover) steak, chicken, or pork, cut into small cubes shopping list
- (1) 15 ounce can tomato sauce shopping list
- 1-2 tsp cumin shopping list
- 1 - 1 1/2 Tbs chili powder shopping list
- Dash of cinnamon shopping list
- 1/2 - 1 cup chicken broth shopping list
- corn tortillas shopping list
- Shredded mozzarella cheese shopping list
How to make it
- Saute onion, peppers and garlic (and any other veggies that you like) in oil, over medium heat, until tender.
- Add dash of kosher salt and pepper.
- Add meat to the pan, and heat through, 2-3 minutes
- Add tomato sauce, cumin, chili powder and cinnamon.
- Stir to combine and simmer for 1-2 minutes.
- Add chicken broth, slowly, stirring to combine.
- Bring to a boil, reduce heat and simmer for 30 minutes to 2 hours, stirring occasionally. (it will reduce and thicken...add more chicken broth if needed for proper consistency).
- In a skillet, heat up corn tortilla, on both sides, in small amount of olive oil
- Remove tortilla from skillet and transfer to plate
- Add large spoonful of guisada mixture to tortilla and top with cheese and fold over, like a taco.
- Serve and enjoy!
- Great served with beans and rice, too!
