I love canned beef... it is so handy to have around for a quick soup... beef and noodles or hot beef sandwiches.. faster than take out... I want to know if I can add beef base to it when canning? That way it is all in there, just open and go from there? Any ideas?

Have been reading on the canning process. It takes a pressure cooker style canner to process the meats to a safe level.

I use a pressure cooker.. .I have one of those big ones with the gauge on it...I can double stack quarts in it... Can't lift after it's full, but it hold a lot! LOL When we lived in Michigan I canned all the time.. Here veggies are so cheap.. I have not done it. I was told by my butcher that beef is going to drop in price after the holidays.. and if I but quanity... he will give me even a better price... So I want to can some..

There are plenty of sites out there that cover canning food. And the answer is yes, you can use broth in the canning process.

Have you considered raising a calf to get an even better price on beef?

you HAVE to use a pressure canner; i typically do sloppy joes, beef stew (great over rice or noodles too!) and various meats with lentils, etc for soup/stews. it takes quite awhile in the pressure canner, but it's worth it when you cannot get to the store or your wallet is a little light that week!

I tried it for the first time last fall with venison - and it was unbelieveable!! I did not use broth, but it makes so much (in the pressure cooker) itself, I was glad I didn't add any. In a few jars I did add some sliced onion (layered with the meat) and also a bayleaf. Very tasty !!!

I can fish, chicken and beef all the time. It's so handy on hot summer days with a salad. My daughter loves taking some camping.

Thanks for the tip on layering onions and sing a bayleaf with the meat.

there were canning classes. I cook things and throw half in the freezer..... Then when it's full we start eating from the freezer or I starts using what's in there to make other meals and such. I wish I could can I have so much more space in my pantry.
I make my own sauce and have always wanted to figure out how to can it so I don't have to make sauce every month.
Or perhaps make a great deal of meals and then eat from that for the summer. I HATE cooking in the summer.... Makes you and the house so hot....

Check out www.pickyourown.org. It has an awful lot of information about canning just about everything.
