These are great! They baked up nice and fluffy, are tender, moist and very flavorful.
When I mixed the ingredients, I mixed up the sugars in my head, so I used brown sugar IN the muffin, and white ON top of the muffin! It should have been the other way around! Oops, they still turned out wonderfully though!
The brown sugar inside probably added some moisture to the muffin, so not a bad thing! I took the opportunity to add some cinnamon to the white sugar to sprinkle on top of the muffins.
Over all, a great snacking muffin, that's not overly sweet or oily like some muffins can be! I love that it uses fresh chopped apples and not applesauce, perfect for us!
