How to make it

  • Preheat oven to 375 and lightly grease a 12 cup muffin pan.
  • Beat egg, oil and honey in a large bowl. Add sugar beating until blended.
  • In separate bowl mix flour, baking powder, salt and cinnamon. Add alternately into sugar mixture with milk. Stir in vanilla and fold in apples.
  • pour 2/3rds full into muffin tins. Sprinkle brown sugar on top of muffins.
  • Bake 18-20 minutes until lightly browned.

    Jan 6/17 this is a great recipe. Fast and easy to pull together. I used buckwheat honey in this recipe. My only suggestion is if you are not using 100% whole wheat bread than I would suggest you use 1/2 white and 1/2 flour. To me and the family the muffins are fantastic as is.

    These are a great snack! Not too sweet, not oily, and they are fluffy and flavourful!! I used brown sugar in the muffins, which may have made them a little more moist. And I brushed the tops with melted butter and sprinkled cinnamon sugar on the top, delish! I love that this recipe uses fresh apples, many apple muffins use applesauce, so this was a perfect recipe for us! :)

    Wow, these not only tasted wonderful, they cooked up beautifully! I wanted to try them as is & then try a diabetic version. I did forget the sugar on top, but they are still really good! Thanks!

    These are just lovely! The muffin itself is not too sweet, so the apple flavor comes through nicely and the sugar on top (I used turbinado) gives it a sweet boost! I'm supposed to be sending these over to a friend's house tomorrow but I don;t think they're all gonna make it! Love these!

    I used to make apple muffins all the time when I first got married...it was the first muffin I ever made! I love the idea of using honey!
