    I found this after another successful ingredient search using "chicken cutlets" and "asparagus." This was easy. I always have these ingredients around - even asparagus. Well, unless its the really expensive time of year! I used a cracker I like called "Classic Cracker." Its buttery and very flaky. I cooked this for a bit over 15 minutes. No way I'm cooking chicken for only 8 minutes. And no way you need 1 cup of cracker crumbs. 1/4 is plenty for two bundles.

I used panko crumbs instead of cracker and I did use a packet of Hollandaise sauce. Deelish! I used boneless skinless chicken thighs instead of breasts and they took longer to cook despite the fact that I did flatten them with a meat pounder. Hubby and Mom called dibs on the leftovers for lunch today. I did take pictures but they weren't pretty so will let Frankieanne's and Pat's pictures stand as the example/model. Thanks for pointing this one out Frankieanne. It was amazing.

    It seems like its usually $1.99 to $2.99 per pound around here. I've seen it as high as $7.99 a pound! But, we grow a lot of asparagus here in California so it may be less pricey here.

    I actually forgot about the sauce and halfway through eating ran and got it, and even took another pic. with it on the chicken :) The only thing I will do next time is to season up the chicken with a touch of salt. Beautiful recipe!
