Authentic Spanish Rice

    Definitely delicious rice! I used red bell pepper instead of green cause that's just what I had. Also, I'm pretty sure the author meant to chop the peppers, onions and tomato, because slicing would have been weird. Did not have the tomato and chicken boullion, just chicken. Everyone really enjoyed this and went well with our fajitas :)

    It is a beautiful pic, Michelle! I can never get my rice to look like that. I would be tempted to stir the rice before but she said not to stir it. I don't think I have ever seen tomato bouillon here? I am going to have to look for it now. Thanks for bringing this recipe to my attention.

    Good4U, I've never hear of tomato bouillon, either, but the recipe submitter said you can find it in the Mexican food aisle.

    I love Spanish rice, and make it all the time! The Caldo de Tomate is a Tomato and Chicken flavoured bouillon. I can't find it in the store where I live now so I use a tablespoon of tomato paste with some chicken stock and works just as good :)

    Beautiful pic Michelle! I chop all the veggies too, I like seeing them in the rice rather than discarding them. :)

    Thank you :) Joce, it has always been a rule of mine to only stir the rice right after it comes to a boil them don't touch it anymore until it's done. Works like a charm for perfect rice every time! Oh, I'm glad you said something Shona, I must have read over where it says to pick out all the large veggies. Yeah, I'm definitely glad I chopped them small and left them in there :)
