Azteca Sopa

    I made Marie's
    Sopa Azteca Tortilla Soup
    for dinner the night before last. I am totally new to fire-roasted canned tomatoes and pasilla chiles. I had a lot of fun making this up.
    Only now do I notice that I was supposed to take the seeds out of the chile (that would have been tricky!). I threw the whole thing minus the stem in the blender along with the tomatoes. I didn't have the epazote and I chose not to add sour cream. I didn't have a melty cheese but I did have a hard Mexican Morolique cheese that I shredded and added. To be honest, in future I'd be okay without the cheese too. I used a homemade chicken broth and after all the ingredients had been added I gave it a taste and decided to add a tbsp. of Ancho Chile powder just for fun .
    Loved the avocado and chicken chunks but not as much a fan of the broken tortilla chips as they get soft quick. And I forgot to add the lime which is a shame as that would have added another level of flavour (although there was tons going on anyway) but I will remember next time.
    This is a super flavourful soup and we loved it. Five forkies! :).....uh....I mean spoonies! :)

I've cooked with dried chilies only once, and didn't use the seeds, so just curious :) It's funny you posted this because I was probably literally going back in the ODD to when the recipes were posted for the 2 soups with the dried chilies at the same time of you posted this! I am going to Penzey's on Monday with my mom and I wanted to see what chilies to buy!
    Yours looks so GOOD!! Do you think this would be good served over rice? My family will wonder where the starch is in the soup, and a soup must contain beans, rice or pasta for them to be happy. I will just eat it as is, no rice :)

    Okay good!! A couple months ago I made Keni's All American Club Soup (ack! I just realized I NEVER reviewed it) and all I got was "this is good but next time it needs more stuff in it" Okay whatever! Okay I'm going to review that recipe after I go back and try and find the pic!

I'm not a rice fan but yes, I can see that this would be nice served over rice. And the addition of beans, rice or pasta to the soup would also totally work I'm sure. The broth is really, really nice. I was even thinking that it would be nice chilled as a soup shot.
    Thanks for the compliments on the pic everybody but I honestly need to get some better lighting. I don't have your guys's beautiful sunshine streaming in my windows this time of year. :)

    Janet, I removed some of the loose seeds, but not all of them..it's been so long since I've made this,,I sort of remember the seeds being hard to remove, so that's probably why! I say remove what you can, and leave the rest:-)

    Marie, this is fantastic!! I LOVED the flavor of the roasted pepper! I did have to use an Ancho Chili, couldn't find the pasilla, but I think it was close enough in flavor. I actually really like what the tortilla chips did in this. This soup is very flavorful and didn't need much salt at all! I used a smoked salt to kind of go along with the flavors. Janet next time you make this definitely remember the lime, it adds a nice touch. I used Monterey Jack cheese, but I would have loved to try using the other two mentioned, no luck finding them though :( My family ate some rice in theirs but I ate mine without, and was perfectly happy :) Added my pic. to the recipe..thanks Marie!!

I'm going to guess that both you and Marie like crackers in your soup? Am I right? I dislike crackers in my soup for the very reason I didn't care for the tortilla chips in this recipe. It's a texture thing to me. I like chips and crackers to have a crunch, not be wet. :) The smoked salt is a very cool idea Michelle. I'll have to try remember that for next time and I will add the lime juice next time as well. It's a really lovely recipe.

    Janet, in Texas everywhere you turn restaurants and deli's have chili on the menu which is served with saltines or soda crackers as a staple, so yes the wet crackers or chips does not bother me :) The kids are so used to it they didn't even notice they were in there, I had to tell them!
