All American Club Soup

- 1lb turkey or chicken meat, boneless, skinless and cut into bite size pieces or shredded (raw is fine, but left over can be used, too... you will just add it at a different time) shopping list
- 10 cups chicken or veggie stock shopping list
- 2 cups water shopping list
- 1/2lb smoked bacon cut into pieces shopping list
- 1 onion, diced shopping list
- 1 14oz can diced tomatoes shopping list
- 1 14oz can crushed tomatoes shopping list
- 2 avocados shopping list
- 1/2 cup cream shopping list
- 2T Dijon mustard shopping list
- juice from 1 lemon shopping list
- 1T dried dill shopping list
- 1t each, cumin, paprika, black pepper, ground celery or any other of your favorite poultry seasonings(if your meat is already seasoned, you can skip or reduce these...just use your judgment) shopping list
- 10oz fresh baby spinach(roughly chopped, if desired) shopping list
- 1 cup shredded swiss or similar cheese(I used fontina SO good!), optional shopping list
Garlic dill Croutons
- 1lb loaf thin sourdough baguette, sliced in 1/2 inch slices shopping list
- 2 sticks butter(I know, but you are making a pound of croutons, so, it's okay ;) shopping list
- 1T dried dill shopping list
- 2 cloves garlic, minced or 1T fresh garlic powder shopping list
- kosher or sea salt and fresh ground black pepper shopping list
How to make it
- In large stock or soup pot, cook bacon pieces over medium heat, about 5 minutes to begin cooking and render fat.
- Add onion.
- If using fresh turkey or chicken, add it to bacon(with 1T olive oil, if needed) and cook, stirring occasionally, until cooked. Do not let brown or over cook. If using cooked meat, just cook bacon until done but not crispy and add the meat in the next step.
- Add tomatoes, stock, water, dill and other seasonings.
- Simmer over medium heat for 30 minutes or so.
- Prepare croutons, below
- In blender or food processor, combine lemon juice, Dijon, avocado and cream and blend until smooth.
- Add this mixture to simmering soup, whisk or stir well.
- Continue to simmer, but do not boil, for at least 10 more minutes, but can continue to simmer for longer, if desired.
- Add spinach about 10-12 minutes prior to serving. It should wilt down but don't let it over cook. :)
For Garlic Dill Croutons
- Melt butter and add dill and garlic and stir well.
- Put bread slices on baking tray or in large zipper style bag.
- Pour butter mixture over bread and toss to coat all pieces.
- Bake at 425 for about 12 minutes, turning once til golden brown on edges.
- Serve soup with croutons and shredded cheese

I made this a few months ago...I loved it! My family loved the croutons but I thought they were too buttery for my taste. Soup is awesome though, thanks for a good one girl 0:)
