    Bacon Stuffed Sweet Potatoes By: Chefmeow
    Unfortunately I did not leave my shell intact and therefore had to put the mashed sweets into a small casserole for the last step, but this only compromised the presentation and not the flavor. This is a delicious combo of flavors! I mixed the paprika right in with the rest of the ingredients and also left out the egg b/c I reduce the recipe so much that it didn't justify cracking an egg. We really enjoyed this!

    Yes it is good. Funny thing, I have three huge sweet potato tubers setting on my counter right now. One is earmarked for growing sprouts so we can try to grow our own sweet potatoes this coming year. One is for making french fries. And the third...........Hmmmmmmmmmmmm.........What to do.

    Interesting note I found on the 'net. More of the starches are turned into sugars the longer the sweet potato can be held between 135 to 170 deg F. Result is a sweeter sweet potato. So bake your "sweets" low and slow.
