Ingredients
  • 8 medium sweet potatoes
  • Vegetable oil
  • 9 slices bacon cooked and crumbled
  • 1/2 cup sour cream
  • 2 tablespoons milk
  • 1 egg beaten
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • Paprika

Directions
  1. Scrub potatoes thoroughly and rub skins with oil and bake at 400 for 1 hour.
  2. Slice skin away from top of each potato carefully scooping out pulp leaving shells intact.
  3. Mash pulp then add bacon, sour cream, milk, egg, sugar and salt and mix well.
  4. Spoon into shells and sprinkle with paprika.
  5. Bake at 400 for 10 minutes.

Tasty recipe, but I would skip the egg or use pasteurized egg product such as Egg Beaters. The short cooking time may not kill any Salmonella which unfortunately today has gotten inside some shell eggs. I have used this recipe and it works great without the egg.


Yuuuuum, this sounds so very good and this is truly different, I have definitely got to try this one for sure.


Sounds great--I hate sugary sweet potatoes. Can't wait to try these savory ones. I might omit the sugar and replace with garlic powder.


Made this today. I bought 4 sweet potatoes. They were huge, and nice and round. Had to double the stuffing stuff as well as the time to bake the potatoes. I have pics I would like to post. Cut the potatoes in half for stuffing instead of cutting the top off them.

Alterations


Sprinkle with Cinnamon instead of Paprika


As good as this recipe is, I might be tempted to stir in some maple syrup to the stuffing mix.
