Baked Cheddar Broccoli Rice Cups

  Made this yesterday :) Had some leftover rice to use, broccoli getting on edge and a little bit of creamy peppercorn mix (Penzey's version of buttermilk ranch mix) so this was my recipe to make for the day. I do like the sound of this recipe's ranch which I do intend to make at some point! I simmered the broccoli until almost done then blanched. Mixed everything up and put in ramekin's instead of muffin cups. Turned out great, we loved this! Nice and cheesy :)
