    Baked Chicken Chimichangas
I've had this bookmarked since it was posted and I finally got around to it. I cut the recipe in half. I'm not sure how one would get eight of these in a 13 x 9 pan. My four fit and I probably had room for one more. I also note the tag "cheesy" but there is no cheese or mention of cheese. Not sure if that is a mistake or not. Still, I liked there was no cheese and it was one of the reasons I wanted to try these.
These are spicy. These were too spicy for me. I'm not sure if that's just me or not. By now, most of you know I'm not into heat. But, I don't want my nose to run or my lips to burn when I am eating my food. When its too spicy, I can't "taste" my food. I did remember to cut the chili/cumin in half so that isn't the problem. Checked my salsa and it was medium. I did see that pile of chili/cumin and wonder if it was too much for me and it was. After I got done eating, I went to the leftovers and opened one up and took a bite of the filling alone. Oucheee!! It was too much for me. Not certain what I will do with the leftovers. I may have to call up a friend or two. Maybe they can help me out with that chocolate tart as well. :)
    Not gonna rate it.

Aww that's too bad they were too spicy for you! They do sound delicious though! I like that they are baked as well and that they turned out crispy! You can send me the leftovers...I like spicy :)

Yes, that's why I'm not going to rate it. The spiciness in these may be perfect for someone else. So - the leftovers are yours. :)

I bake my chile rellenos that way and it saves a bunch of calories--don't know how many but...

I just made these for lunch...I shy away from making chimichangas because of the deep frying...but baking like this works so well! I cut the recipe down quite a bit but used the same proportion of salsa/cumin/chili powder and it wasn't too spicy for my taste. I'm with Frankieanne though about not wanting my food SO spicy that you can't taste the flavor! I used chipotle powder and it's smokiness as well as the cinnamon's sweetness was quite tasty. Mine were mini-chimmies as the only flour tortillas I had were fajita size. It was kind of a challenge getting them rolled. :-O I added my pic to the recipe page.

Hmm, I thought it was probably me with the heat. Although its funny, I do like chipotle peppers. I think its the smokiness. Maybe I should try these again with that substitute. I'll bet smoky with the sweet would be really good! That's a gorgeous picture, GK. What's the stuff on the top, including what looks sprinkled?
