Balsamic, Garlic Chicken Breasts

    Chicken Breasts With Garlic And Balsamic Vinegar posted by Conner909

    This is the second time I've made this recipe. The first time I didn't add the mushrooms, so I used onions and reduced the sauce down to a nice syrup.
    This time I used mushrooms, and didn't reduce the sauce down as much because I didn't want to overcook the mushrooms.
    Both ways tasted excellent!! Even the kids liked it! I served it with a rice pilaf both times, and used the extra sauce over the rice.
    The only thing I changed slightly was when I cooked the mushrooms, I removed the chicken. Once the mushrooms and garlic cooked for a couple minutes, I added the chicken back in and then simmered for 10 minutes in the sauce as directed. Also there is two measurements for thyme. I figured one of them was for adding at the end of cooking. So I used 1 T of fresh thyme in the sauce, and 1 tsp. for finishing. Perfect!

    The mushrooms smothered the chicken in the photo, Lol, but it is under there ;)

    Beautiful photo, Cosmicmom! This recipe is very similar to one I have for balsamic chicken that my husband actually likes, and he's not a big chicken fan. I've never thought of adding mushrooms, but they look good in there. Nice add-in!

    Excellent savory flavor. Needs more 'shrooms for me. All came out exactly to spec. The simmer time at the end takes out any bite from the balsamic. I used some 20 year old aged balsamic. Not the thick kind.
    Plated it with five spice powder and turmeric orzo.
    Mother cleaned her plate with a smile.
    I like leaving the garlic cloves whole. The simmer time takes out any sharpness of fresh cloves.
    Used dried time.

    It's such an easy recipe too! I rarely make the same thing twice in a week, so it must be good! Lol ;)
    I'm glad your mom liked it too Points! I was surprised my kids liked it, but your right the acidity of the vinegar cooks out and there is no pungency to the garlic.
    I just checked out the pictures, haha, pretty close but my plates don't say John Deere. ;)

    Used Baby 'Bellas and cut any stem off. Used BS breast fillets and had to cut them in half to make the weight spec.

    I had to cut one of the chicken breasts in half too Points, the other 2 were much smaller. I didn't even think about the mushrooms, though once I got them in the pan I realized I probably had too many, lol. But I used the exact amount of sauce called for, both times I made it.
    Thanks Ellie and Michelle :) Lol, I'm not a mushroom fan either. The kids tried them, but it was a no go! I think Pete ate half of those mushrooms on the plate, and the other half went into the leftover rice that he took for lunch the next day!
    This will probably go on regular rotation for awhile. I can get easily bored of chicken breasts recipes, but this is definitely not boring!

    Tried this recipe last night and it got two thumbs up. Hubby says to add it to our repertoire. I used b/s thighs instead of breasts, I didn't add the bay leaf and I did the similar thing as Shona, in that I pulled the chicken out while I was sautéing the shrooms.
    Your orzo looked good as a side Points. I'll have to try that some time.
    The chicken thighs were on the small side so I didn't cook it the full ten minutes.
    It's an easy recipe and a yummy one. Thanks for bringing it to my attention!
