Bangers and Mash

    I came across some lamb and mint sausages at the market a little while back and it was time I used them, so I searched lamb sausage and got this! When chopping the onions I read the line for the garlic, to cut into chunks. Ooops, then later I noticed it was supposed to be in thin rings. Oh well! My sausages were not huge, they were pretty small, a little bigger than a breakfast sausage link. I used about 1/4 of the bottle of wine, 1/2 seemed too much to me, but what do I know :P One last thing, I chose to use sweet potatoes for the mash, which went well with the sausage and sauce. Everything was delicious!!!

    Marie I did cook the onions for 30 minutes, which made them super soft and sweet. Having kids helps with patience for things like that I guess lol. I actually did homework with them while the onions cooked lol.

    My local store had some lamb and mint sausages in the frozen section where they put some specialty meats (Game usually, Bison, etc.). They were about the same size you described.
    Excellent photo!! I like that you used sweet potato, sounds like a good combo.:)
