Biggest Loser Beef Stew

    This was a nice, flavorful stew! I didn't have the oat flour, so I used almond flour. Loved that this used sweet potatoes instead of white. Used less mushrooms since I'm the only one that eats them and added in some peas at the end, just for the heck of it :) Will make this again for sure!

Since I have to watch my carb intake, I have been adding sweet potatoes to my stew and, you're right, they're really good in there! I still add a white one for my husband, but he likes the sweet, too.

    Thanks bakerme! I love sweet potatoes and did not miss the white potatoes in this one bit :) Luckily my husband and kiddos like them too, somewhat lol. They prefer them smothered in brown sugar or maple syrup with butter....but I can get them to eat a little bit this way.

    That looks delicious. Very nice for this time of year. I haven't had beef stew in years! Last time I looked at stew meat, it was so pricey! It sure sounds good though.

    Frankie, if you buy a boneless chuck roast and trim and cut it up yourself, you will get the best stew meat ever! When I told a butcher friend that buying beef stew meat was kinda hit or miss, tender one time and tough the next, he told me the prepackaged stuff is made up of whatever cuts they have left at the end of the day, so you never know what's in there, thus the inconsistency. We've been buying chuck roasts on sale and my husband cuts them up for me. We haven't had tough stew meat since!

    I also didn't have oat flour and used AP flour instead. Suppose I could have ground up some oats.
    Could have gone the chuck roast way and make my own, but in a cash crunch decided to go with some eye of round. I like carving my own steak$ to $ave on the buck$. But the initial outlay for the roast walked me back to the price of one steak this time.
    It's a little, haha, funny that the destructions say to low simmer in two steps of 45 minutes each but the headliner says it takes 1 hour to make. And then there is the prep time on top of it all.
    It's been a long time since I've had any beef but wanted to make this since it was going to get down below freezing for the next few mornings.
    I wouldn't have any problem making this again. Made a note to add some thickener at the end.
    Will keep an eye out for a boneless rump roast sale.

    Glad you liked it Points! You know, it would be good with a thicker broth but it seems like most beef stews don't call for that. I didn't even notice the time difference lol :)

    Great photo ML2C. It probably doesn't have a thickener because it's a Weight Watchers recipe. I do the same as Bakerme, I haven't bought stewing meat in years. It's so much better when you cut your own.

    Made this again. Ground up some regular oats to make the beef breading flour. Beef short ribs were the least expensive cut of meat, so I used that. And 4c of beef bouillon instead of store bought beef broth.
