    Black Bean Side
This was good. Better than I expected because there isn't much to it. I made it exactly as written. I couldn't taste the lime. They went well with the Soft Chicken Tacos of Pat's though. Not sure would make it again but I ate it. ha

Yeah, I can't figure out what that is in the avatar. I'm trying not to think about it. :)

Leg bone angle suggests it's a dog. A pig on a spit is supposed to be slow roasted over embers. The bed under that spit shows flames.

That just cannot be a dog..it looks like a pig's head..if it is a dog, hope someone turned him/her in for animal cruelty..

Maybe they just don't know what their doing as far as roasting a pig..

I doubt if it is. There aren't any high flames it is just a reflection from the coals below. Also it might be by a lake in upper NY State where they live? The whole area and how that spit was built isn't reflective of a third world country type of settling, where they do eat wild dogs and weirder things. Ask the poster possibly? They might answer before jumping to conclusions. I have been to many pig roasts in my time and everyone does theirs differently. None of the posters other recipes indicate them eating anything weird either! Just saying!

A picture can be swiped from the 'net just about anywhere. Doesn't mean it's the authors pic.
The higher up on the food chain the tastier the meat.

It could be a pig. A super lean young pig.

I would have puréed this and added the lime just before serving.
