Blt Salad With Bacon Dressing
My brother-in-law gave me some bacon for Christmas that he had gotten from their favorite local butcher and I just found it buried in the freezer yesterday. Yipes! It was fine but I decided I had better cook it all up. Problem was, as it was a gift, it had no weight or a price on it and it felt heavier than a pound and there were 17 slices in the package. I had to guess as to the amount of bacon so I figured 6 slices was 1/2 a pound so that is what I used for the dressing. I made the full amount of dressing and let it chill for just a bit before I served it up. I have leftover dressing and I'm really looking forward to having another salad for dinner tomorrow.
