Braised Mustard Greens With Bacon

    Recipe by Pleclare: Braised Mustard Greens With Bacon
    Used my first crop of mustard greens from the garden.
    Sauteed the onion first before adding the greens. I think there is too much water added to this recipe. I used only 4cups and thought it was too much. But it turned out well.
    I like the addition of vinegar. Of course I love spinach and vinegar.
    First time I used sugar in a greens recipe. Didn't know how much to use so only used a tablespoon. Couldn't really tell any effect the sugar had on the dish. I'm sure I would have liked it just the same without any sugar.
    Servings are 4 but I ate the whole thing.

    Did you use the stems? I have cooked with mustard greens once a couple years ago. It took me forever to start buying and cooking greens because all I ever heard is that they are very bitter. I'm just sorry that I've missed out on how delicious they are. I love them!

    Chopped off the stems, as few as they were. I suppose these would be classified as baby greens and the stems probably weren't tough enough to deserve chopping.
    Guess it depends on how chewy you like your greens as to the amount of cook time.
    Bitterness comes from summer grown greens. Frost is supposed to do something to them to make any bitterness go away. Some say to put them in the freezer for overnight but to my way of thinking that won't work.

I figured they would cook up like collard greens, and after browsing recipes, they do! I wanted to try this simple recipe, and these were delicious! Bacon makes anything taste good and the little zing from the apple cider vinegar was great! I did not add any sugar. Loved them just the way they were :)

    I keep thinking I need to try mustard greens because they're supposed to be good for you. With your picture, Ml2c, and this recipe, I may finally break down and try them. Do they taste like spinach? The ingredients sound like my German potato salad dressing and we love that!

    Yes Bakerme, it is very similar to spinach! Just needs to be cooked a lot longer :)
