Butter Lettuce Cups With Stir-Fried Chicken

    Oh wow this is good!! I had some leftover steak that I threw in to stir fry with the chicken. The sauce is SOOOOO good, I put some in a little bowl to dip as well. I found a little can of fried rice noodles at the store so I used those instead of doing it myself. Very pretty to look at as well to eat :)

    Well this recipe was a total hit in my household as well. I may actually halve the sugar amount in the stir fry sauce and increase my sriracha amount next time. :) I didn't use the water chestnuts as I don't care for them. We didn't attempt to eat these in our hands. :) The flavours are spot on as are the textures and colours! There's a lot going on and it's all most delicious! Bet this mixture would also taste fabulous in a rice paper wrap! Thanks Luisa!

    I wasn't paying attention really but I'd say 30 min. is about right. I put the chicken in the marinade and prepped the stir fry sauce ahead of time so I'd be set to go when Jim came in the door. Also cut up my veggies and washed my lettuce cups and then when it was time to eat the chicken cooks up very quickly.

    I also say it takes about 30 mins. I made some jasmine rice for the kiddos and Michael and I started that first because it would take longer! How did you eat these Janet? With a fork? Yours looks great, next time I want to do the fried bean noodles, they look interesting!

    Rice as a side was a good idea Michelle as I found there was a lot of extra stir fry sauce left over that would be great with rice. Yes, we ate them with a knife and fork. Jim does not like 'messy' foods. LOL! Last year my girlfriend and I had gone to a Moxie's Restaurant and she'd ordered a Grilled salmon salad and it had been garnished with those noodles. We thought it was the coolest thing we'd ever seen. Went straight to a little Chinese Grocery and described what we wanted and bought a pkg. each.

    the marinade and stir fry sauce take all of a good 2 minutes each to put together :-) The only thing that takes up the rest of the time is chopping the chicken up and cooking it!
