Butter Lettuce Cups with Stir-fried Chicken

- Chicken Marinade: shopping list
- 4 boneless and skinless chicken breasts or thighs, finely diced (pea sized) shopping list
- 2 tbsp. granulated sugar shopping list
- 2 tbsp. low-sodium soy sauce shopping list
- splash of sesame oil shopping list
- splash of rice wine vinegar shopping list
- 1 clove garlic, minced shopping list
- 1 teaspoon grated fresh ginger shopping list
- 1 tablespoon cornstarch shopping list

- 3 tablespoons peanut oil shopping list

- 1/2 cup shitake (or button) mushrooms, diced shopping list
- 1/2 cup water chestnuts, finely chopped shopping list
- 2 green onions, chopped, divided shopping list
- Stir-fry Sauce: shopping list
- 1/4 c. granulated sugar shopping list
- 1/2 c. water shopping list
- 2 tbsp. hoisin sauce shopping list
- 3 tbsp. low-sodium soy sauce shopping list
- 2 tbsp. rice wine vinegar shopping list
- 2 tbsp. organic ketchup shopping list
- 1 tbsp. lemon juice shopping list
- splash sesame oil shopping list
- sriracha sauce (red rooster sauce), to taste shopping list
- ~ shopping list
- inner lettuce leaves, like butter lettuce, boston or iceberg shopping list
- *mung bean noodles (Saifun), fried at last minute for topping shopping list
- shredded carrots, for garnish shopping list
How to make it
- Let chicken marinate for 15-30 minutes.
- Make the stir fry sauce by dissolving the sugar in water in a small bowl. Add remaining ingredients. Mix well and refrigerate this sauce until you're ready to serve.
- Bring peanut oil to high heat in a wok or large frying pan. Saute chicken for 4 to 5 minutes. Add the white part of the green onions only (save the green) and mushrooms to the pan and continue to saute for a few more minutes.. Add the water chestnuts and stir fry sauce to the pan and saute the mixture for a couple minutes. Taste for seasoning, adjust to your liking. Lastly, add the sliced green part of the green onions. - Place chicken into each lettuce cups and garnish with crunchy rice noodles and shredded carrots.
- *you can use fresh bean sprouts instead of the fried noodles
