Carrot-honey Muffins W/chia Seeds

    I have tried a couple times to make this recipe and have always been short an ingredient or 2. Finally I had all the ingredients and started making them, and guess what! I was out of ground ginger lol! I had fresh but not sure how that would have tasted in baked goods so I just left it out. I upped the nutmeg to make up for the ginger...maybe?.... Anyway, I loved all the healthy ingredients in this and when I tasted one, I thought....OMG so good, but SO healthy tasting, will Caiden like them? I made these not only because they sound delicious but for my little guy since he is having issues in the restroom...and was hoping some of the ingredients in this may help move things along. He ate 2 in one sitting and wanted another one, but I had to say lets wait until tomorrow :) So happy he loved them!!! Thank you Shona!!

    Michelle...these look really tasty. Love alllll the ingredients in them. Don't bake much but am going to bookmark this as it really does sound yummy. 1/4 tsp. ginger won't make or break the recipe so no big deal. Lovely picture. Did you use your coconut oil or the canola oil? :)

    Yeah I didn't think the ginger would make a huge difference but I was still like "AWW shoot" when it wasn't in there. I used the coconut oil. I looked up how much the brand and jar size that my husbands co-worker gave me was it was $35! I wanted to keep replenishing my stock with that same brand since it smells and taste so wonderful...but hhhmm...my husband may not like me spending so much on it, we'll see lol!

    Thanks for making them Michelle!! :) The first time I made them I thought they needed that little bit of zing, so I added ginger to them and it seemed to balance out the flavours so I added it to the recipe. I was surprised my kids liked them too! They request them often now :) If you use all canola oil you will get a lighter, fluffier muffin. I sometimes use half coconut oil and half canola. Or whatever I have on hand :) If you don't have enough carrots, you can sub with some grated apple, I have done that too! ! LoL ;)
