Chicken from ChuckieB; potato from Rml

    Two recipes from my dinner tonight:
    Jarlsberg Chicken and
    Microwave Potatoes
    I found some chicken breasts in my freezer and some Swiss cheese in the refrigerator but no ham! Chicken Cordon Bleu or Malibu Chicken were out! But, I found this chicken recipe that doesn't use ham. This was easy and so good! Lots of cheesy, gooey goodness. I had two breasts but I didn't half the wine. I've found halving sauce ingredients is not a good idea when cooking for one. But, I didn't end up with any sauce which was OK with me. Maybe my heat was too high. I don't know but I loved it anyway.     I dug up a nice big Yukon gold potato from my potato garden container today. I did a "potato" search and then filtered it by "microwave" as I didn't want to heat up my kitchen. Rml's potato cooking technique intrigued me. I really loved the results.
    I have one chicken breast and one potato half leftover which will make me an easy Sunday night dinner tomorrow.

    I ALWAYS microwave my potatoes, so much quicker than heating up the oven....that's an interesting way though, halving it and using the string....

    I'm glad you enjoyed the chicken recipe Frankieanne. I guess I should change the directions perhaps and just say to continue to add wine in small increments while it evaporates. That way, no matter what temperature you have it set to or whatever, you'd end up with sauce. Cuz, all the sauce is is the reduced cooking wine that gets a bit thicker because of the flour on the chicken and the cheese that drips down into it. If you do come across Jarlsberg cheese some day do pick some up and try this again. I'm not a huge swiss cheese fan, but I LOVE Jarlsberg in this recipe. Your picture was beautiful. Thanks for adding it to the recipe page. :)
    Did you find that the bay leaf imparted a fair amount of flavour to the cut potato side? I always way prefer baking my potato in the oven as it just seems to have a different consistency than if I do them in the microwave. That being said, I've never tried to halve them and then nuke them.

    I didn't mind the lack of sauce, Chuckie. The bottoms got all nice and kinda caramelized with the cheese sticking to the bottom of them. I love Jarlsberg, too, and I buy it once in a while but I do love plain ol' Swiss. But, I will try this again next time I buy Jarlsberg. I'm not a huge bay leaf fan so I didn't use it on the potato. I didn't want to risk ruining my beautiful home grown potato. :-P There is a different consistency to a microwaved potato, that's for certain, but it was a different kind of good. :)
