Microwave Potatoes Recipe
I've been making this side dish for years. I found it in (I believe) the original Frugal Gourmet cookbook. I loved his show. I did a search for this recipe to make sure it hasn't been posted already, but there are 45 pages of potato recipes.

Ingredients
  • 2 Baking Potatoes ... or more.
  • Butter
  • one Bay Leaf for each Potato
  • Salt & Pepper
  • string

Directions
  1. Wash the Potatoes. Don't peel them.
  2. Cut each Potato in half.
  3. Butter both cut sides and sprinkle with Salt and Pepper.
  4. I've also used other seasonings but the flavors compete with the Bay Leaf.
  5. Place one Bay leaf on one Potato half and place the other half on top.
  6. Tie the Potato halves together with string.
  7. Microwave on High for 7 minutes, depending on the strength of your Microwave.
  8. To be honest with you, I cheat and just balance the other half of the potato on top, instead of using string.

K.. made these.. went so good with the Navy wings.. I did in micro.. then put on grill to keep warm and they sucked up some of the grill flavor... oh so good!
