Chicken Jalapeno And Cheddar Casserole

    Sometimes my cheese sauces turn out grainy so I was worried about this one. It was not the least bit grainy! I may have added a little more cheese than called for, I didn't measure :) I love the whole rings of red bell pepper, so pretty! My jalapenos weren't spicy darnit! I think nutmeg is a must in any cheese sauce, so I liked that addition..Served over lemon pepper peppardelle pasta (only had 1/4 bag egg noodles, why?) So delicious we loved it!!!

    That's a pretty picture with those red rings peeking out. That's so funny about the 1/4 bag of egg noodles. I clean out my cupboards once in a while and always there is a "what is this for?" or "why is this in here?" :-)

    I just emailed this one to myself to short list. I'm going to have to change the name though as hubby has a major aversion to the word "Casserole". He will however, love the red and jalopeno peppers.

    I hate that Frankie! My biggest pet peeve is when I don't label something in a ziplock bag that I put in the freezer. Sometimes when I'm in a hurry I just throw it in there and think I'll remember. Then I find it months later, and have no clue what it is, so I just trash it.
    Hehe, this is not really like a casserole, especially since it's not cooked with any starch item. He'll never know the difference :)
