    I had two legs and two thighs and I don't know how much they weighed. The only issue I had here was that my almonds were not getting golden in all the juice and fat that was left from cooking the covered chicken. So, I spooned that off and tried to golden up the almonds but that didn't really happen. I also did not have fresh parsley (why don't I ever buy that stuff!) so I put dried in the lemon juice and let it sit while the chicken cooked. The sauce was good and I am glad I made rice so I could skooch the rice around in the sauce to get it all up. Very tasty and pretty easy as well.

    Parsley is something you can grow out your back door or on the window sill and have it available whenever. Go for flat leaf parsley or cilantro for a little more flavor. I find curly parsley too bland. And most people just use it for decoration and color. It gets pushed around the plate a lot.

    I'm so glad you gave this a go Frankie. You can toast the almonds first in a small saute pan if you'd like them all golden. Takes just a few minutes and the oil from the nuts is all that is needed. Just don't take your eyes off the nuts because once they start to heat up they can go over done in a flash. I had completely forgotten this recipe. Your picture is beautiful. Thanks for the reminder :)

    I've grown parsley in the past but for some reason this year I didn't. I do know that one grows better in the summer and one grows better in the winter (curled vs flat leafed) and I can't remember which is which though.
