Collard Greens

    After Points posted that collard greens recipe a couple weeks ago, I knew I had to make some. I don't think I've ever even had collard greens before. I know bacon is a nice component to them as most recipes include it, but I wanted a light version, and just so happened to have this one saved from a while back! I was so surprised at how delicious they were! This is seasoned nicely and I love the flavor the liquid smoke gives. Looks like she used the ribs in hers as well, but I didn't. I wouldn't say collard greens are bitter, but they do have a little bite to them, that some may turn their noses up to (called my family). I had this for lunch 3 days in a row :) Oh she doesn't specify when the tomatoes go in so I added them at the liquid smoke stage.

    Think I see some celery in the authors pic as well as maybe a slice of bacon.
    Your collards look like they need more simmer time to look as wilted as the authors.

    Your right, that does look like celery, I was thinking maybe that was the rib of the collard. After 15 minutes on the last cook time I tasted them and they were very soft and not chewy or tough at all so I stopped cooking. I agree they don't look as cooked down as Dahlia's but I was happy with the texture so I figured they were done!

    Marie, you would love this recipe then, both of those ingredients are here...I forgot to mention I easily doubled up on the red pepper flakes :)

    When to add the tomatoes is still a mystery. I added them just before the second simmer.
    Like the flavor.
    Plated the collards with mashed potatoes and pulled pork.
    I had these bookmarked before ML2C started this string.

    Glad you gave these a try! Yours do look more wilted than mine, but they were super tender, so not sure why they look like they aren't. Anyway, sounds like you had a nice dinner :)

    As a matter of fact, yes. Store had very gritty collards OR pre-chopped triple washed in a two pound bag.
    Took the bag and used 1lb of it and 1lb of it in another recipe. Yes the ribs were in there and indeed they do look like celery ribs in a close up shot.
