Collard Greens

- 2 tbsp olive oil shopping list
- 1/2 large onion, chopped shopping list
- 1 tsp red pepper flakes (more or less to taste) shopping list
- 1 garlic clove, finely chopped shopping list
- 1 lb collard greens, cleaned and chopped shopping list
- 3 cups vegetable stock shopping list
- 2 tomatoes, seeded and chopped shopping list
- salt & freshly ground black pepper shopping list
- 1 tsp smoked paprika (more or less to taste) shopping list
- 1 tsp apple cider vinegar (more or less to taste) shopping list
- 1 tsp liquid smoke (more or less to taste) shopping list
How to make it
- Heat oil in a large pot over medium heat.
- Saute the onions until softened, about 2 minutes. Then add the red pepper flakes and garlic and cook another minute.
- Add collard greens and stir. Cook another minute.
- Add vegetable stock, cover and bring to a simmer.
- Let cook for about 35 minutes before you stir in the liquid smoke, smoked paprika, and apple cider vinegar.
- Cover again and cook for another 10-25 minutes, or until tender.
- Season will salt and pepper and add more red pepper, vinegar, smoke, and/or paprika to your taste.

Well you have turned me into a collard greens fan Dahlia!! You do need to add in the directions when the tomatoes are added, but I think I got it figured out :) Yum!!! Added my pic and into the IMI --------> more

Good grub. Still don't know where to add the tomatoes. Nothing wrong with the seasonings as is. Although I did halve the red pepper flakes.
