Corned Beef Hash

    I admit I made this for my husband but I stole a bite and it was delicious! We had some left over corned beef brought home from a family get together and this was perfect! I wasn't that hungry so had my sunny side up on gluten free toast :) This is spot on delicious though and perfect with those runny yolks. Oh I used purple cabbage...Hubby gives it 5 forks (and so do I from my small bite :)

    Maybe it's the stuff in the can at the store I don't like (possible salt content) because this recipe looks good and I wouldn't be opposed to making it.

    There's no such thing as leftover corned beef in my house. That's one of the reasons I got so big. I would have the deli person slice up a whole ham of corned beef then take it home and make Dagwood sammies and Reubens from it. I've had to swear off of the stuff.

Okay the way my MIL and I cooked it was to add the corned beef to a pot and fill with water, bring to a boil, boil for about 5 minutes then drain...that gets rid of A LOT of saltiness and brine flavor. Throw away the seasoning packet (or save for something else, not sure what lol) and put beef in a clay pot (romertopf) or large oven proof dish and cover the beef with water. Add 4-6 sprigs of rosemary and a whole sliced orange. Bake according to how large the beef is. It's mild but flavorful...

    Oh gosh just read "in the can" ...so you don't like corned beef in the can?! Thats probably different from making it from the whole corned beef slab I described above. Don't know what the canned stuff taste like, probably very salty too, like you expained.

    I've never had homemade corned beef hash. I've just had the canned stuff which is too salty for me. Corned beefs are too big for me so I never buy them. I haven't any since I left home over 30 years ago! It looks good with that egg on top! That's a great picture. :)

    I've always pitied the deli person that didn't have an automatic slicer and had to do the whole ham by hand, but not enough to not get it done. >:-)

    Points, I even read where some people do the boiling and draining twice just to ensure it's not too salty. Once was good for us... I wont be buying corned beef for myself to make....definitely not worth the price...my MIL paid $18 for a 3 1/2 pounder.

    Canned Corned Beef is commonly known as "Bully Beef”. It is made from low end undesirable small cuts of meat and Is jammed packed with as much fat as Spam with extra salt and preservatives added! Corned Beef Brisket that you buy for Corned Beef sandwiches at the Deli or a whole Corned Beef for Corned Beef and Cabbage. Is much leaner and more expensive and it does not require the extra salt and preservatives as canned does.
