Cranberry Kale Salad

  I wasn't super hungry but needed to eat and had a bunch of kale wilting away in my fridge, and came across this recipe in my box :) It was really good! I didn't have Kraft balsamic vinaigrette so I whisked together some olive oil and balsamic and threw a few seasonings in there and voila! Used coconut sugar in place of the brown. Oh had to use a regular tomato, but if I had it, I know the cherry tomatoes would have been better. Will definitely make this again!!

  LOL this was I think my first trial for Kale. Just remember to rub the kale with you hands for several minutes before you added the dressing etc.

  Frankieanne...kale is wonderful, I use it in soups..maybe you could try that as your 1st kale dish?
