    Crispy Fish Sandwiches With Vidalia Tartar Sauce
    The Vidalias are in the stores so I grabbed one and made this up. This is a really great fish sandwich! I had a little under a pound of cod so I cut the recipe into thirds, which required my calculator but that is why I have one in the kitchen. I made it to spec except I had no dill. I cut the fish into four pieces before I cooked it and put the crumbs only on the top as she suggested. I think that is a great idea, by the way. I had a little piece of leftover fish with the tartar sauce so I could taste it better. It has just a tad of heat from the hot sauce which I did use - although it wasn't from Louisiana! Very nice recipe.

    Thank you, ladies. It is a good recipe for tartar sauce, LB, and its also a great recipe just for the fish baking part of it! The bottom of the fish were kinda crispy. Oh - I forgot to mention that I cooked my fish for 15 minutes. Cooking time depends on the fish, of course. :) I better add that.

    OH! I MUST make this. I had it bookmarked as I was in search of Vidalia onion recipes last year. When I was a kid I LOVED McDonald's Filet o' Fish sandwiches so this will be so much better. Excellent pic Frankieanne. It looks SO good.
