Crispy Fish Sandwiches With Vidalia Tartar Sauce

- 6-8 mild fillets(cod, halibut, flounder, sole, talapia)--about 3lbs shopping list
- olive oil shopping list
- about 3/4 cup panko bread crumbs shopping list
- 2t dry dill weed shopping list
- 1t lemon zest shopping list
- 1/4-1t cayenne shopping list
- 1t dry mustard shopping list
- 2 medium/large ripe tomatoes, sliced shopping list
- several leaves of fresh leaf lettuce(red, green, Romaine, spinach, etc) shopping list
- 6oz sliced mild white cheese(havarti, Muenster, Provolone) shopping list
- 6 whole grain sub/club sandwich rolls, sliced in half shopping list
- kosher or sea salt and plenty of fresh ground pepper shopping list
Vidalia Tartar Sauce
- 1 1/2 cups mayo shopping list
- juice from 1 large lemon shopping list
- 1/3 cup diced vidalia onion shopping list
- 2T Dijon shopping list
- 3T dill pickle relish(sub sweet, if desired) shopping list
- 2t Old Bay Seasoning shopping list
- couple dashes of louisiana hot sauce shopping list
- lil kosher or sea salt and fresh ground pepper shopping list
How to make it
For Vidalia Tartar Sauce
- Combine all ingredients and refrigerate until ready to serve. This is best made up a couple hours ahead, but is still great immediately.
- In small bowl, combine Panko, dill weed, cayenne, dry mustard, lemon zest and a bit of salt and plenty of ground pepper.
- Lightly drizzle(I use a spray bottle) dry fillets with olive oil.
- Lay fillets in lightly sprayed baking dish(I used cast iron) and sprinkle liberally with the Panko mixture. Alternately, you can add the crumb mixture to a pie plate and dip each side into the crumbs, then lay on the baking dish. I don't do this, however, because the bottom doesn't get particularly crispy, so we prefer it one sided and crunchy, but do what you'd rather. :)
- Bake at 450 for about 12 minutes, until fish is firm and flakes and topping is lightly browning. Do not over cook. Some types of fish may take slightly longer.
To Prepare Sandwich
- Lay cheese slices on bottom piece of roll.
- Top cheese with a piece of fish.
- Slather...err...spread top roll with Vidalia tartar sauce.
- Add lettuce and tomato.
