Crockpot Corned Beef Cabbage

    Recipe by Divaliscious: Crockpot Corned Beef Cabbage
    The sweet stink drove me out of the house. I just wanted to dive in and eat it all but it was another hour before it would be done. Got some yard work done to take my mind off the smell.
    Used a can of beer instead of water.
    A wonderful set it and forget it dish. But one has to leave the house while it's cooking.
    Was concerned about the cabbage getting done. Nothing to worry about! Everything was done well. There was no carving this roast. It just fell apart.
    Think I'll drain the liquid and make some thick gravy to enhance the dish.

    I havent had corned beef and cabbage in decades. It was on sale at my local store and I picked one up. This is going in the crock pot today. Is there a difference in potatoes? I remember reading that some hold together better in a slow cooker than others. Maybe reds or yukons?

    Yes, reds or Yukons! Any waxy type potato will do. The russet is a starchy potato and will probably disintegrate over the extended cooking.
    And the celery is already in there. No need for a celery twig in the pic.

    This dish sure brought on a ton of memories. My dad loved CB&C. I cant remember how he used to make it, but this was how I remember it tasting. He used mustard as in my posted pic. On my seconds, I used horseradish. Both ways are excellent. Such an easily made meal. I loved this. I really had to CRAM the cabbage in. to even get the lid somewhat closed. Make plenty for leftovers, too : )

    .Points, how did you make the gravy? I have probably about 3 cups left. Instead of my usual making a pot of beans I think I would like to try gravy

    Add water to the juice to make 4 cups. Add beef bouillon according to how much water was added.
    Melt 1/2 cup butter in a medium saucepan over med-hi heat.
    Stir in 1/2 cup flour and cook stirring for a couple of minutes to get rid of the floury taste.
    Add in a cup of juice and stir to prevent lumping. Add another cup, stir. Add the remaining 2 cups and cook until thickened. S&P to taste.

    St. Paddy's day is this week and I've got to be out of town on that day. A perfect time to put the crock to work. If I can get past the price of the slab of beef, then it's crock-on.

    I've never had good luck making corned beef in a crockpot, but it comes out fork-tender in my Le Creuset Dutch oven on the stovetop.
