Crockpot Pork Loin With Thyme

    Took a couple of days to make this, in that, I made from scratch chicken broth. Had trouble with terminology. Don't know what a bib of garlic is. I assumed it meant a clove of garlic. None of the dictionaries could clear it up. So I used cloves as opposed to heads.
    Good flavor, meat was still a little tough, not fork chunk apart tender. And it takes a little bit to simmer down the sauce. I put it on high and let it rip to save some time.
    Bite starts off with the pork flavor and sweet from the sauce. It finishes with the mint flavor blending in to a slight pepper aftertaste. On the side was some smoke flavored Lima beans.
    Dish is good as it stands but if one wanted a more fall apart loin it should simmer on LO and for longer.

    Yes it is about 1lb. I had two 1 1/2" loin chops I had cut from a loin bought on good sale. Was 1 1/4lbs but it worked out fine. Was about a half pound each after crocking.

    Better breath freshener than parsley. I'd rather they put mint on my plate at a restaurant than the parsley although I'd bet most (not high end) places don't know that is why parsley is added to the plate. It's not just to make it look purdy.

    A lot of places around here also put kale as a garnish...never eat it though. I worked at a steak house and they NEVER washed it, guess they just figure the people wouldn't eat it....but some people did!
